Understanding Amylose: The Chemistry Behind Starch Behaviour

Amylose is a linear polymer composed of α-D-glucose units linked by α (1→4) glycosidic bonds. It is one of the two main polysaccharides in starch, along with amylopectin. Leached Amylose Detection: The proportion of amylose that leaches during heat treatments or processing is a critical factor in many industries.
