Understanding Amylose: The Chemistry Behind Starch Behaviour

Amylose is a linear polymer composed of α-D-glucose units linked by α (1→4) glycosidic bonds. It is one of the two main polysaccharides in starch, along with amylopectin. The amylose content in starch significantly affects the gelation, viscosity, retrogradation, and digestibility properties of food and industrial starch applications.
