Beyond Total Starch: Why Starch Profiling Matters

Starch is one of the most widely used carbohydrates in food and industrial systems, yet it is often reported as a single value - total starch. In reality, starch exists as structurally and functionally distinct fractions that behave very differently during processing and digestion. At the molecular level, starch is composed of amylose and amylopectin, whose arrangement determines how it interacts with heat, water, and enzymes.
